1/2 can of Coconut Milk (drain pulp)
Coconut Milk (boxed..) I used enough to cover the mussels.
Mussels (I used 2 lbs)
a ton of garlic
cilantro
jalapeno
I don’t have specifics but, first you bring Coconut Milk, sliced jalapeno *not much* and garlic to a simmer.. after you have rinsed and cleaned the mussels – add them. Place a lid on top. 15 mins. Add more milk garlic and cilantro at the end. (To taste).
This may not sound that great. But it is amazing. You serve the mussels in this broth and it’s out of this world.
